With summer just around the corner promising endless days, blistering heat and the re-emergence of the lesser-spotted friendship group, it’s the perfect time to break out your brand-new BBQ, clean down your grilling tools and get to work on some delightful dining for you, your friends and your family.

 

With vegan and vegetarian diets on the rise though, this year will see more demand for vegetarian and vegan-friendly BBQ options on the grill this year.

 

For those of us more accustomed to barbequing burgers rather than beetroot though, the prospect of whipping up delicious vegan and vegetarian BBQ can be a daunting one.

 

Of course, anyone can throw a few vegetables on the BBQ and be done with it, but if you’re out to impress, what are the quickest and easiest ways to deliver for your guests? Here are our top recipes:

 

Vegetarian Stuffed Sweet Potatoes

 

Coming to us from Jamie Oliver himself, we’re in love with his recipe for ‘mega stuffed sweet potatoes’.

 

Made vegan by removing bacon from the recipe and vegan by switching out the cheese for a vegan alternative, this flavourful and exciting BBQ addition couldn’t be easier to cook, simply scrub your sweet potatoes, season and lightly oil them before placing them on the BBQ to cook, before cutting them open, adding your ingredients and then replacing your potatoes on the heat to finish.

 

Smoky Mushroom and Walnut-Stuffed Portobello

 

Burgers are a staple of the British BBQ, but for the vegan and vegetarian crowds? Your typical choice is a depressingly bland frozen veggie burger out of the freezer.

 

Change it up with Olive Magazine’s recipe for vegan Smoky Mushroom and Walnut-Stuffed Portobellos, which feature juicy portobello mushrooms stuffed with other mushrooms, walnuts, onion, garlic and more to create a sweet, smoky and intriguing burger replacement which can stand on its own or be placed in a bun.

 

Tamarind Squad & Halloumi Skewers

 

Halloumi has become a firm favourite amongst the barbeque crowd for the fact it can be placed directly on the grill and retain its shape and texture (i.e. not slip through the bars), but its flavour profile can be used to greater effect when it’s paired with herbs and spices.

 

This Tamarind Squash & Halloumi Skewers recipe from BBC Good Food couldn’t be simpler and pairs butternut squash and halloumi with tamarind paste, soy sauce, sesame oil, garlic, lime, red chilli and brown sugar for a sweet, spiced taste sensation that takes just 15 minutes to prep.

 

Barbecued Fennel with Black Olive Dressing

 

Fennel? On the BBQ? It’s not as mad as you might think. In fact, this super-simple Barbecued Fennel with Black Olive Dressing recipe is actually totally delicious.

 

Simply oil and season your fennel slices, grill for 5 minutes on each side and top with olives, garlic, parsley, basil, lemon juice and more oil for a salad which won’t sit alone at the end of the table. Simple flavours they may be, but they’re the perfect antidote to a meat-heavy BBQ and a jaw-dropper for the vegans and vegetarians in your clan.
